Leftover Steak Chili



Have you ever made way to much steak and wondered what to do with it?  Sounds kind of outrageous but I always have left over prime rib during the holidays.  This is your answer!  SO SO filling and delicious, not to mention its a crockpot dinner!  I will admit my husband was not the biggest fan because it felt like more of a stew to him.   I really wish he loved a good crockpot stew!
 
Ingredients:
  • 2 cups leftover steak, cubed (Click for Tri-Tip Recipe)
  • 1 can diced tomatoes
  • 1 can kidney bean, drained
  • 1 can black beans, drained
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 beef bouillon cube
  • 2 cups water
  • 1/2 tablespoon A-1
  • 1 teaspoons spicy Montreal seasoning (optional)
  • 3 tablespoons chili powder
  • 1 teaspoon cayenne
 
Directions:
  1. Cube up leftover steak and place into greased crock pot.
  2. Add tomatoes, beans, onions and garlic on top of steak.
  3. In a small saucepan add bouillon, water, A-1, Montreal seasoning, chili powder and cayenne pepper and bring to a boil.
  4. Pour sauce into crockpot and stir until well combined.
  5. Place lid on crock and cook on low for 6-8 hours.
  6. Add your favorite toppings and enjoy!

MAC Sauce Burgers

Big Macs at home, NO PROBLEM!  I decided to call this a MAC burger because it obviously doesn't look anything like a regular Big Mac, and A Small Mac didn't sound appropriate because its huge!
Ingredients for Sauce:
  • 1/2 cup mayo
  • 2 tablespoons sweet relish
  • 1 tablespoon french dressing
  • 1 teaspoon onion powder
  • 1 teaspoon sugar
  • 1 teaspoon white vinegar
  • dash of salt
Ingredients for Burgers:
  • 1 1/4 lb of ground beef, I use 80/20
  • 1 teaspoon Worcestershire
  • 1/2 teaspoon burger seasoning plus additional to taste, (if you don't have this substitute for seasoning salt with a little onion powder)
  • buns
  • 4 slices yellow American cheese
  • 1/4 of small sweet onion, finely diced
  •  1/2 cup lettuce, finely diced

    •  
    Directions for Sauce: Whisk all ingredients together until smooth.
    Directions for Burgers: Preheat grill. In a large bowl add beef, Worcestershire and burger seasoning and mix together with hands. Form into 4 individual patties and sprinkle with additional burger seasoning if desired. Cook patties on the preheated grill until they are cooked to your desire, about 4 minutes per side for medium-well adding cheese for last minute or until melted. Lather top and bottom of bun with MAC sauce, add patties and top with lettuce and onions!

    Leftover Steak Salad with Avocado Lime Dressing

     
    I have to admit,  its very rare (no pun intended) that we have leftover steak in our house.  The other night I had to make some steaks before they went bad, my husband was out with friends and I had dinner with my father in law earlier.  So I put the boy to bed, grilled some steaks and went to bed. 
     
    Ingredients for Salad:
    • leftover steak, sliced
    • 1 bag romaine lettuce
    • 1 ear corn, cooked and cored
    • 1 cup black beans
    • green onions, diced
    Ingredients for Dressing:
    • 1/2 cup olive oil
    • 1/2 avocado
    • 1 clove garlic
    • 1 tablespoon white wine vinegar
    • 1 tablespoon water
    • 1 small lime, juiced
    • salt and pepper, to taste
    Directions for Dressing:  Combine all ingredients into a food processor and blend until creamy.  Let sit in refrigerator for an hour or two before serving.
    Directions for Salad:  Combine all ingredients into a large bowl and top with dressing.

    Indoor Grilled Blackened Medallions

    For me, life doesn't get much better than a nice day, friends, family and a nice big juicy STEAK! This can easily be grilled outside on the BBQ however, we had a little rain so I decided to stay in.  The blackened seasoning gives it just the right amount of kick and the steak is juicy and delicious.
     
    Ingredients:
    • 2 Medallion steaks
    • 2 tablespoons olive oil
    • 2 teaspoons blackened seasoning
    • dash of salt, pepper, onion and garlic powder
     
    Directions:  Season steaks on both side with all above ingredients.  Let marinade in refrigerator on each side for 30 minutes each, then let sit at room temperature for 20 minutes before grilling. Melt butter over medium/high heat in a large skillet and grill on each side for about 4-5 minutes.

    Pork and Beef Three Bean Chili

    Chili is one of my Go-To dinners so I usually have everything on hand.  I forgot to check my pantry before grocery shopping this week and didn't realize I was all out of canned beans...OOPS.  However, I found a huge bag of mixed beans (black, kidney and pinto) in the pantry so, I decided to whip some chili up from scratch.  I have to say this was fantastic and I prefer it to the bagged seasoning and canned beans.

    Ingredients:
    • 2 cups mixed beans, a little over 3/4 cup of black, pinto and kidney (Pre-soaked for 24 hours)
    • 1 lb ground beef
    • 1 lb ground pork
    • 1 cup beef broth
    • 2 cans diced tomatoes
    • 1 small can diced green chilies
    • 1 onion, diced
    • 3 garlic cloves, finely minced
    • 3 tablespoons chili powder
    • 2 tablespoons chohula
    • 1 teaspoon cumin
    • 1/2 teaspoon onion powder

    Directions:  In a large skillet brown beef and pork with onion until cooked through.  Take 1/4 of mixture and puree with 1 can tomatoes in a food processor or blender.  In a large cup whisk broth, chili powder, cumin and onion powder until well mixed.  Add all remaining ingredients and seasoned broth into a crock pot and cook on high for 7-8 hours or low for 10-11 hours.

    Mongolian Beef with Broccoli

     
    My husband and I both really enjoyed this dish.  The sauce is delicious and we were discussing all the different ways to try it next.  It would work great for chicken and any kind of stir-fry or yakisoba.  Definitely a new favorite!
     
     Ingredients:
    • 2 teaspoons vegetable oil
    • 1/2 teaspoon ginger, grated
    • 1 clove garlic, grated
    • 1/2 cup soy sauce
    • 1/2 cup water
    • 3/4 cup dark brown sugar 
    • 1/2 tablespoon sriracha
    • 1 tablespoon hoison
    • 1/4 teaspoon red pepper flakes
    • 1 head broccoli, lightly chopped
    • vegetable oil , for frying (about 1 cup)
    • 1 lb beef sirloin 
    • 1/4 cup cornstarch
    • 2 large green onions, chopped

    Directions for Sauce:  In medium sauce pan heat oil over medium/low heat and in garlic and ginger.  Stir for a little bit making sure not to burn garlic.  Stir in soy sauce, water, hoison, and sriracha.  Dissolve brown sugar in sauce, stir in pepper flakes and bring to a boil until sauce thickens, stirring constantly.  Remove from heat.

    Directions for Beef:  Slice steak into 1/4 in strips and lightly dip in cornstarch.  Let cornstarch thicken for about 10 minutes on beef.  Heat up one cup of oil in a wok or large skillet over medium heat.  When oil is nice and hot add beef and saute until brown, about 3 minutes on each side.  Place beef on a plate covered with paper towels to soak up some of the extra grease.  Remove excess oil from skillet and bring sauce to a light boil.  Add beef and broccoli until everything is coated evenly and broccoli is just a little tender and serve over rice.

    Grilled Steak with Sweet Garlic Mustard Marinade

    This marinade is absolutely amazing.  Very simple and it brought out the natural flavor of the beef without overpowering it.  I didn't even add any A-1 to it!!  This is the best picture I was able to capture with my husbands sticky fingers grabbing at it.  A very light and sweet marinade that would be amazing with chicken as well.

    Ingredients:
    • 2 steaks, cut of your choice around 1- 1 1/2 inches thick
    • 1 small granny smith apple juiced, or 1/4 cup pure apple juice
    • 1/2 lemon, juiced
    • 2 tablespoons Dijon mustard
    • 2 cloves garlic, zested
    • salt and pepper, to taste

    Directions:  Whisk all ingredients except salt and pepper together until smooth. Lightly pierce steaks with a fork and sprinkle with salt and pepper.   Add steaks and marinade into a large Ziploc bag and store in refrigerator for at least 2 hours.  Before grilling let steaks sit at room temperature for around 1/2 hour.  Place on heated grill and cook until lightly charred, 3-5 minutes.  Flip and continue to cook for another 3-5 minutes for medium rare.

    Campfire Burgers

    After many trips to Red Robin for this amazing sauce, I decided to make a Copy-Cat recipe.  I initially made the sauce just for the fries however, it was so delicious I had to dump it on my burger.  It reminded me of how I pour the orange sauce over everything at a Teppan Yaki restaurant.  These burgers are extremely juicy and the flavor is perfect.
     
    Ingredients for Sauce:
    • 1/2 cup mayo
    • 1/4 cup BBQ sauce
    • 1/2 teaspoon paprika
    • dash of cayenne pepper
    • dash of garlic powder
    Ingredients for Burgers (4 patties)
    • 1 1/4 lb of ground beef, I use 80/20
    • 1 tablespoon A-1
    • 1 teaspoon Worcestershire
    • 1/2 teaspoon burger seasoning plus additional to taste, (if you don't have this substitute for seasoning salt with a little onion powder)
    • buns
    • 4 slices yellow American cheese
    • your favorite burger toppings (onions, tomatoes, avocado, lettuce, pickles, etc..)
    Directions for Sauce: Whisk all ingredients together until smooth.
    Directions for Burgers:  Preheat grill.  In a large bowl add beef, A-1, Worcestershire and burger seasoning and mix together with hands.  Form into 4 individual patties and sprinkle with additional burger seasoning if desired.  Cook patties on the preheated grill until they are cooked to your desire, about 4 minutes per side for medium-well adding cheese for last minute or until melted.  Lather top and bottom of bun with campfire sauce, add patties and add your favorite topping ingredients!

    Leftover French Dip Shepherd's Pie

    I was extremely lazy the other night and pretty much all of last week, HAHA.  I had mashed potatoes leftover from the night before and was determined to use them in something.  After rummaging through the freezer I came across some leftover french dip meat and knew exactly what I was going to do.  My husband and I were at Costco the other weekend and he pointed at the Shepherds Pie and said, "that looks good."  I was a little taken aback because every time I have ever mentioned making a Shepherds Pie he curls his nose up with a sour face.  So, I have never attempted one.  Big surprise when he didn't like it!!  I am posting the recipe because, I LOVED it.  Seriously, it was so good.  I really wasn't surprised because he is not a fan of any kind of shredded beef so, I am going to try it again with ground beef.
     
     Ingredients:
    • 1 lb leftover french dip meat, recipe.
    • 1 bag frozen mixed vegetables
    • 2 cups mashed potatoes
    • 1 egg white
    • pepper and paprika, to taste
    Directions:  Preheat oven to 400 degrees.  In a large skillet add meat and vegetables and bring to a simmer.  Add meat to a lightly greased casserole dish.  In a mixing bowl add mashed potatoes and gently fold in egg white.  Spread potatoes over beef mixture and sprinkle with pepper and paprika.  Bake for around 30 minutes or until potatoes are golden brown.  Let sit for 5 minutes before serving.

    Oven Roasted Tri Tip Steak

    When I ask my husband whether or not he likes dinner I usually get a yes or no so, I was a little taken aback when I got lots of feedback.  He thought the steak was perfectly cooked/seasoned and immediately started throwing out ideas for leftovers.  Luckily for us we both enjoy medium rare, this roast was so juicy and tender, proof is in the photo.  Needless to say I walked away from dinner feeling very chipper.  This is definitely my new go to seasoning for any steak.
     
    Ingredients:
    • 2 lb tri tip roast
    • 1 tablespoon A-1
    • 1/4 teaspoon garlic powder
    • 1/4 teaspoon onion powder
    • 1/4 teaspoon pepper
    • 1/4 teaspoon blackened seasoning
    • 1/2 teaspoon Montreal seasoning
    •  
      Before Roasting
     
    Directions:  Let roast sit at room temperature for about an hour.  Preheat oven to 400 degrees.  In a small bowl mix A-1, garlic powder, onion powder, pepper and blackened seasoning forming a paste.  Lather onto roast and sprinkle with Montreal seasoning.  Bake in oven for 45-60 minutes.  I always do 45 minutes for medium rare.  Let roast sit for 15 minutes before cutting.

    Crockpot French Dip II

    This is my second recipe for French Dip and it was just as tasty.  My first recipe is just as delicious however, this one was easier to throw together.  Every time I make this I always ask myself, "why don't I make this more often?"  We also added yellow mustard to ours and it was delicious!

    Ingredients:
    • 1 beef chuck roast
    • 1 can beef consomme
    • 1 can french onion soup
    • provolone cheese
    • hoagie rolls

    Directions: Add roast to crock pot and top with consomme and soup.  Cook on low for 8-10 hours or high for 5-7 hours. When finished shred meat and let sit in juice, place two cheese slices on each hoagie roll and broil until melted.  Add juice from crockpot to individual dipping cups, place shredded meat on hoagie rolls and serve.

    Ginger Broccoli Beef

    I was so in love with the beef from my Thai Beef Noodles, I was dying try Broccoli Beef with it.  This is one of my favorite dishes to order from Teriyaki places and now I can make it from home.   

    Ingredients:
    1 lb sirloin steak
  • 1 lb sirloin steak, thinly sliced (Place in freezer to slightly freeze before cutting, makes it so much easier)
  • 1 large head broccoli, chopped
  • 3 stalks green onion, chopped
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil
  • 1/4 cup beef broth
  • 1/4 cup soy sauce
  • 1 tablespoon oyster sauce
  • 1 clove garlic, minced
  • 1/4 teaspoon ginger, zested
  • siracha, to taste

  •  Directions:  Mix together soy sauce and ginger, place in Ziploc bag with sliced steak and marinate for an hour or so.  Heat 1 tablespoon olive oil and sesame oil in a large skillet. Saute garlic, 3/4 of onions and add beef strips, cook on both sides for about a minute or two. Cooking time will depend on how well you like your beef. Remove beef from heat and set aside.  Add chopped broccoli to skillet and coat evenly with broth and oyster sauce.  Bring to a simmer and remove from heat, add beef, serve over rice and top with remaining onions.

    Cheddar Stuffed Cheeseburgers

     Once again Pinterest has given me another fantastic idea.  I came across a recipe for Caresse stuffed burgers and I immediately knew I was going to try it with cheddar.  How can you go wrong with more cheese on a burger?  Well, you cant!!  This was amazing. 

    Ingredients:
    1 lb ground beef (1/2 pound burgers each!!)
    1/2 tablespoon Worcestershire
    1/2 tablespoon A-1
    Cheddar cheese, thickly sliced and desired amount
    Cheddar cheese, thin sliced and desired amount
    seasoning salt and pepper, to taste

    Directions:  Mix ground beef, Worcestershire, A-1, seasoning salt and pepper together.  For 4 individual patties and flatten.  Add thick cheese slices to two  of the patties (shown below.)  Place remaining patties over the top and mold together.  Heat skillet over medium heat and lightly coat with non stick spray. Add patties and cook for about 4 minutes on each side adding remaining cheese slices for the last minute to melt.

    Thai Beef Noodles

    The BEEF is incredible!!!  I was seriously impressed with myself.  My husband was not a big fan of the noodles and suggested I use Ramen noodles next time.  (He thought they were sticky, I liked them!) If you are not a fan of noodles, you should definitely make the beef and serve over rice. 

    Ingredients:
    • 1 lb sirloin steak, thinly sliced (Place in freezer to slightly freeze before cutting, makes it so much easier)
    • 1 package Thai rice noodles
    • 1 package frozen stir fry vegetables
    • 2 tablespoons sesame oil
    • 1 tablespoon olive oil
    • 2 cups beef broth
    • 1/4 cup soy sauce
    • 1 tablespoon oyster or hoison sauce
    • 1 clove garlic, minced
    • 1/4 teaspoon ginger, zested
    • siracha, to taste

    Directions:  Mix together soy sauce and ginger, place in Ziploc bag with sliced steak and marinate for an hour or so.  Prepare noodles according to package directions, make sure to strain and rinse properly. Return noodles to pot and coat with 1 tablespoon sesame oil.   Heat 1 tablespoon olive oil and sesame oil in a large skillet.  Saute garlic and add beef strips, cook on both sides for about a minute or two.  Cooking time will depend on how well you like your beef.  Remove beef from heat and set aside.  Add vegetables to skillet and saute for a couple minutes, add broth and hoison/oyster sauce and bring to a boil. Remove from heat and toss in noodles and top with beef.

    BBQ Beef Biscuit Pockets


    One of my favorite food blogs to follow is Chef-In-Training because I feel like our food styles are very similar.  I think her blog is actually the reason I started blogging in the first place.  Anyway, she posted this recipe, and I was dying to try it.  My husband is not a fan of pie crust, so I substituted with biscuits.  No silverware needed! 
    Ingredients:
    • 1 lb ground beef
    • 1 package refrigerated biscuits
    • 1 1/2 cup cheddar cheese, shredded
    • 1 cup corn, frozen
    • 1 1/2 cup favorite BBQ sauce

    Directions:  Preheat oven to 350 degrees.  Brown beef in skillet until cooked and drain excess fat.  Stir in corn and BBQ sauce until coated evenly.  Flatten all biscuits with hands or a roller until about 1/4 inch thick.  Top half of the biscuits with meat and Cheddar cheese.  Place the remaining flattened biscuits over the top and pinch the sides together making a pie.  Cut four lines in the top for ventilation.  Bake for 12-15 minutes, or until tops are golden brown.

    Swedish Hamburger Biscuit Casserole


    
    I pretty much love any kind of hamburger casserole.   I also love that you can top them with mashed potatoes, tots, corn bread, or biscuits. I had a packet of Swedish meatball seasoning and a can of biscuits and voila, this recipe was born.

    Ingredients:
    • 1 lb hamburger
    • 1 small sweet onion, diced
    • 1 can diced tomatoes, drained
    • 1 can cut green beans, drained
    • 1 package refrigerated buttermilk biscuits
    • 3/4 cup milk
    • 1 packet Swedish meatball seasoning (two part packet, sauce and seasoning)
    • 1 teaspoon red pepper flakes (optional)
    • salt and pepper, to taste

    Directions:  Preheat oven to 350 degrees.  Brown hamburger and onion over medium heat.  When hamburger has about two minutes left add seasoning part of packet and mix well.  Add tomatoes, green beans, and pepper flakes.  Sprinkle sauce over the top and stir in milk.  Let simmer for another 5-10 minutes for sauce to thicken.  Spray a 9x13 pan with nonstick spray and pour in meat mixture, top with biscuits and bake for 20 minutes.  Let sit for 5 minutes and serve.

    Glazed Beef and Pork Meatloaf

    It has been such a long time since I have had meatloaf.  My family was coming to town for my little guys first birthday!  I wanted to make a quick and hassle free dinner and this was perfect.  I love meatloaf because it takes a couple minutes to throw together and cooks for a hour in the oven while you can get lots of other things done.  My hour was spent loving on my nephew Enzo and my birthday boy!!

    Ingredients for Meatloaf:
    • 1 lb ground beef
    • 1lb ground pork
    • 1/2 cup sweet onion, diced
    • 2 eggs
    • 1/2 cup milk
    • 1 1/4 cup panko bread crumbs
    • 2 tablespoons A-1
    • 2 teaspoons Worcestershire
    • 1 1/2 tablespoons Montreal seasoning
    • 1 teaspoon paprika
    • 1 teaspoon garlic powder
    • pepper, to taste
    Ingredients for Glaze:
    • 1 1/2 tablespoons brown sugar
    • 1 tablespoon mustard
    • 1/3 cup ketchup
    • 1 teaspoon Worcestershire
    • pinch of pepper
    Directions:  Preheat oven to 350 degrees.  In a large mixing bowl combine all meatloaf ingredients and blend together with hands.  Place mixture into a lightly greased loaf pan.  In a seperate bowl whisk together all glaze ingredients and spread over the top of meatloaf.  Bake uncovered for an hour.  Let sit for about 10 minutes before serving.

    Hamburger Scalloped Potato Skillet

    My husband loves Hamburger Helper, so I decided to surprise him.  After getting home from the store realized I forgot to buy a box, so boxed scalloped potatoes to the rescue.  I try my best to make as much stuff without processed food but I didn't feel like cooking and he loved it.

    Ingredients:
    • 1 box scalloped potatoes
    • 1 lb hamburger
    • 1 10 oz can diced tomatoes, with juice
    • 1 10 oz canned green beans, drained 
    • 1/4 cup cheddar cheese
    • 2 cups water
    • 1 beef bouillon cube
    • 1/4 teaspoon garlic salt
    • salt and pepper, to taste

    Directions:  Brown hamburger in a skillet.  Add tomatoes, green beans, bouillon, garlic, water and scalloped potatoes without the cheese sauce.  Bring to a boil stirring constantly, reduce heat and simmer for about 20 minutes or until potatoes are soft.  Add cheddar cheese and cheese packet and stir until combined.

    Pico De Gallo Burgers

    When I was younger my Dad would always make Pico De Gallo for us.  Sometimes he would add fresh roasted corn and my favorite was when he would add fresh bay shrimp.  SO YUMMY.  Whenever we had any leftovers I remember him just rolling it into burger patties and I guess I was missing my Daddy because I have been craving all of his specialties!!  So excited I am going to visit him this weekend.

    Ingredients:
    • 4 buns of your choice
    • 1 lb ground beef
    • 1 cup Pico De Gallo
    • 1 teaspoon olive oil
    • 2 avocados, chopped
    • 4 slices pepper jack cheese
    • lettuce
    • pinch of salt, pepper, and cumin

    Directions:  In a mixing bowl add beef, seasonings, olive oil and 2/3 cup Pico De Gallo.  Mix together and form four burger patties.  Heat skillet over medium heat and lightly coat with non stick spray.  Add patties and cook for about 4 minutes on each side adding cheese slices for the last minute to melt. (This can always be made on the BBQ)  I was just cold and did not want to go outside!  In a separate bowl add avocados and remaining Pico De Gallo and mix together leaving it a little chunky.  Add burger patties to bun and top with lettuce and guacamole!

    Philly Cheesesteak Sloppy Joes

    As I was watching the Eagles and Giants game on Sunday Night Football they showed lots of local Philly Cheesesteaks and they looked so good.  I stumbled across this recipe and adapted from it.  I will for sure be making these again and with the leftovers my husband suggested I put it over the top of white rice and brown gravy.  Looks like I will have a post for tomorrows night dinner as well!

    Ingredients:
    • 4 hoagie rolls
    • 8 slices of provolone
    • 1/2 teaspoon garlic, minced
    • 1 tablespoon olive oil
    • 1 pound ground beef
    • 1 onion, thinly sliced
    • 1/2 cup pepperoncinis
    • 2 tablespoons steak sauce
    • 1 tablespoon worchestershire
    • 1 cup beef stock
    • Salt and ground black pepper 
    Directions:  In a large skillet add olive oil and heat on medium heat.  Saute onions and garlic until onions are a little soft then add mushrooms.  When mushrooms begin to shrink add pepperoncinis and saute for about a minute stirring frequently.  Remove a quarter of the veggies and set aside.  Add ground beef to skillet and brown.  Stir in steak sauce, worchestershire, and stock and bring to a boil.  Season with salt and pepper, turn down heat to a simmer and let sit until it thickens.  Place rolls on a cookie sheet and lay cheese on the top side and place in broiler until cheese begins to bubble.  Remove and top with beef and set aside veggies. 

    Cookers Note:  I put the leftover meat on top of white rice with some beef gravy.  It was really good and a great way to get rid of the leftovers.
