Sweetface Egg Salad

I can't even begin to explain the amazingness of this Egg Salad.  If you already love yourself a good old fashioned egg salad sandwich, this will knock your socks off.  How did this come about, you might ask?  Well, I was enjoying a wonderful homemade Cobb salad when I had the most amazing bite of hard boiled egg and Tillamook Extra Sharp White Cheddar.  My immediate reaction was pure bliss followed closely with the thought of an amazing Egg Salad Sandwich. So here you go....

Ingredients:
  • 2 hard boiled eggs, diced
  • 1 small tomato, diced
  • 2 Tablespoons Mayo
  • 1 Teaspoon Yellow Mustard
  • A couple stems of chives, diced
  • 1/4-1/2 cup Extra Shard White Cheddar
  • 4 bread slices
  • Salt and Pepper, to taste
Directions:
  1. Add eggs, cheese, mayo and mustard to a small mixing bowl.
  2. Stir together until blended well.
  3. Stir in tomatoes and chives.
  4. Season with Salt and pepper.
  5. Place mixture onto bread slices and enjoy!!!

Avocado and Egg Breakfast Sandwich

I have no idea why it took me so long to think of this.  I rarely have bacon or ham in the house for breakfast sandwiches so after rummaging through the fridge I thought of this.  My little guy and I ate this so fast and it is my new favorite. 

Ingredients:
  • 2 slices bread, toasted
  • 1 egg
  • 2 slices cheese from block, or 1 slice pre-packaged
  • 1/2 avocado
  • 1 tablespoon salsa
  • small dab of butter

Directions:

Toast 2 slices of bread.

In a small skillet fry egg with a tiny dab of butter.

Meanwhile, add salsa and avocado into a small bowl and mix together.

Lather avocado mixture onto both slices of bread.

Top one side with cheese and egg.

Add remaining piece of bread and enjoy.

PB&J Grilled Cheese

I seriously think I died and went to heaven with this one!  Seriously, this is amazingly delicious.  I kind of feel like a genius, this must be exactly the way the person who invented Jalapeno Cheese Bagels felt.  Like my husband, I know some of you are absolutely repulsed by this.  I will tell you what I tell him, "Don't knock it till you try it!"

Directions:
  • 1 croissant square, sliced
  • Extra Sharp White Cheddar Cheese, Enough to cover one side of croissant
  • Peanut Butter
  • Jelly

Directions:  Lather one side of croissant with PB and the other with Jelly.  Place the cheese on one side and form into a sandwich.  On a lightly greased panini press (I used my George Foreman) cook for about 2 minutes or until bread is lightly brown and crisp.

Italian Meatball Subs


This is one of my never fails go to dinners.  I love making these subs because they are so simple and I have most of the ingredients on hand at any given moment. You can make these the night before and heat them in the crock pot when you are at work.    My husband is not a fan of bell peppers but I think they would be a Delicious with some fresh sauteed sweet onions.  Simple, fast, and easy! 
Ingredients:
  • 1 pound Italian sausage or chicken
  • 1 small onion chopped
  • 1 egg
  • 1/2 cup Italian bread crumbs
  • Sliced provolone cheese
  • 1 jar favorite spaghetti sauce
  • 1 package hoagie rolls
Directions: Preheat oven to 350 degrees. In a large mixing bowl stir together sausage, onion, egg, and bread crumbs. Form into 1" balls, place on cookie sheet and bake for 20-25 minutes. (The last couple times I have made these I flatten the meatballs slightly with a spoon.  Makes it a lot easier to eat when they are flatter!)Meanwhile place sliced cheese on each side of hoagie rolls. Add cooked meatballs to sauce pan, add jar of sauce,and heat until warm. Place hoagie rolls onto a new cookie sheet and place in oven until cheese melts. Add three meatballs to sandwich and enjoy.

Cookers Note: For a lighter meal use Jennie-O Italian sausage and substitute breadcrumbs for oatmeal. Just add extra Italian seasoning to your meat mixture. However, the full fat version is so much better! You can always make the meatballs and freeze them. Then when you are having company or you know you will be in a time crunch for dinner add the frozen meatballs with a jar of sauce into your crock-pot and cook on low while at work.

Avocado Egg Salad Sandwich

This was delicious.  When I was pregnant I was constantly calling my mom to make me Egg Salad Sandwiches.  I LOVE THEM.  I came across a Avocado Egg Salad on pinterest and decided I would try it.  I never looked at the recipe, so I just added Avocado to my regular kind.

Ingredients:
  • 3 hard boiled eggs
  • 1 small avocado
  • 1 tablespoon mayonnaise
  • salt and pepper, to taste
  • lettuce
  • Tomato
  • Bread

Directions:  Add avocado, eggs, and mayo into a food processor and pulse until mixed but still chunky.  Taste and add salt and pepper accordingly.  Add to one piece of bread and top with lettuce and tomato.  Cover with the remaining piece of bread and enjoy.

Leftover Turkey Sandwich

 
Words can not even describe  how AMAZINGLY delicious this is.  I ate every bite and made another one.  I told my husband that every Thanksgiving I am going to make this when dishing up my main plate. 

Ingredients:
  • turkey
  • bread
  • stuffing
  • cranberry sauce
  • gravy
  • mashed potatoes
Directions: Re heat all ingredients minus the cranberry sauce.  Lightly toast two slices of bread then spread cranberry sauce on both pieces.  Top one side with stuffing and one side with mashed potatoes, gravy then add turkey.

Jalapeno Popper Grilled Cheese


To quote Ice Cube "I got to say today was a good day."  I got to spend all day with my son because I am lucky enough to work from home.  He took two LONG naps and when we went to the grocery store he waved and clapped at EVERY person who looked at him.  It was a beautiful crisp fall day here in Washington, my husband came home early from work, I put makeup on, its Thursday Night Football with the SEAHAWKS and to top it all off I got to indulge in this mind blowing sandwich. 
Ingredients:
  • 4 slices sourdough bread
  • 1 small can sliced jalapenos in escabeche
  • 2 tablespoons butter, room temperature
  • 1/4 cup cream cheese, room temperature
  • 2 tablespoons green onions. chopped
  • 1/2 cup pepper jack cheese, shredded
  • 1/2 cup cheddar cheese, shredded

Directions:  In separate bowl mix cream cheese and green onions together.  Butter the outside of each piece of bread and spread with cream cheese.  Add  the jalapenos on top of cream cheese and sprinkle with cheese.  Heat a non-stick pan over medium heat and grill sandwiches until golden brown and the cheese is melted, about 3 minutes per side.

Baked Catfish Sandwich

Have I mentioned how addicted I am to all of the cooking channels?  I seriously watch them all the time.  I cant even tell you how many ideas and great cooking tips I have learned from it.  So I guess watching lots of TV isn't that bad if you are learning right?  Sandra Lee made a catfish dish the other day and I had to try it!

Ingredients:
  • 2 catfish fillets
  • 1 cup buttermilk
  • 1 cup panko breadcrumbs
  • 1 teaspoon blackened seasoning
  • 1 teaspoon cajun seasoning
  • Hoagie Rolls
  • tomato
  • lettuce
  • tartar sauce
  • pepper, to taste

Directions:  Preheat oven to 350 degrees.  In a large ziploc bag add buttermilk, seasonings and fish.  Marinate for 30 minutes in the fridge. Add panko and pepper to taste to a shallow dish.  Remove fish from bag and coat with panko.  Place coated fish on a cookie sheet coated lightly with olive oil.  Spray the top of the fish with olive oil and bake for 15 minutes.  While fish is cooking spread tartar sauce on both sides of the hoagie rolls and add lettuce and tomato.  Top with cooked fish and serve.

Philly Cheesesteak Sloppy Joes

As I was watching the Eagles and Giants game on Sunday Night Football they showed lots of local Philly Cheesesteaks and they looked so good.  I stumbled across this recipe and adapted from it.  I will for sure be making these again and with the leftovers my husband suggested I put it over the top of white rice and brown gravy.  Looks like I will have a post for tomorrows night dinner as well!

Ingredients:
  • 4 hoagie rolls
  • 8 slices of provolone
  • 1/2 teaspoon garlic, minced
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 onion, thinly sliced
  • 1/2 cup pepperoncinis
  • 2 tablespoons steak sauce
  • 1 tablespoon worchestershire
  • 1 cup beef stock
  • Salt and ground black pepper 
Directions:  In a large skillet add olive oil and heat on medium heat.  Saute onions and garlic until onions are a little soft then add mushrooms.  When mushrooms begin to shrink add pepperoncinis and saute for about a minute stirring frequently.  Remove a quarter of the veggies and set aside.  Add ground beef to skillet and brown.  Stir in steak sauce, worchestershire, and stock and bring to a boil.  Season with salt and pepper, turn down heat to a simmer and let sit until it thickens.  Place rolls on a cookie sheet and lay cheese on the top side and place in broiler until cheese begins to bubble.  Remove and top with beef and set aside veggies. 

Cookers Note:  I put the leftover meat on top of white rice with some beef gravy.  It was really good and a great way to get rid of the leftovers.

Cuban Sandwich

This did not disappoint at all.  After searching for ideas for left over pork tenderloin I came across this one and made a couple changes.  I love pepperoncinis and thought they would be a wonderful addition.  The pickles and pepperoncinis gave just the right amount of crunch and the meat was so good with the provolone.

Ingredients:
  • 1 baguette (the bakery did not have Cuban bread)
  • 4 slices of deli ham
  • thinly sliced pork tenderloin
  • 3 pieces provolone cheese
  • pepperoncinis, to taste
  • sliced pickles, to taste
  • mustard
  • 1 tablespoon butter
  • garlic, minced just a pinch

Directions:  Melt butter and add garlic in separate bowl.  Cut baguette in half and coat the outside with butter and garlic.  Spread mustard on the inside of each half and layer cheese, ham, tenderloin, pickles and pepperoncinis.  Use a heated panini press or even a George Foreman to press the sandwich until cheese is melted.
