Whole Wheat Banana Honey Muffins

Confession:  I really didn't think I was going to like these at all.  I am not a big fan of whole wheat flour but these are AMAZING.  My little guy has already scarfed down a couple today and best of all I don't feel  guilty one bit. 

Ingredients:
  • 1 3/4 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup vegetable oil
  • 1/2 cup honey
  • 2 eggs
  • 2 bananas, mashed
  • 1/4 cup hot water
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla

Directions:
  1. Preheat oven to 325 degrees.
  2. In a large bowl mix flour, soda, and salt until well combined and set aside.
  3. In a large mixing bowl blend eggs, oil, honey bananas and cinnamon until well combined.
  4. Slowly add in dry ingredients until well combined adding in water slowly.
  5. Pour batter into greased muffins tins about 3/4 full.
  6. Bake for 15-20 minutes.  Mine were perfect at 15 minutes.

Cinnamon Roll Muffins

I kind of feel like I am living in the movie, Julie and Julia right now.  I have been trying so many recipes from Chef-In-Training and obviously blogging about them!  This recipe was fantastic.  I am definitely going to try the original recipe one day but, I just had to try this one first.  I was absolutely addicted to the Cinnamon Roll Bread I made a few weeks back and this seemed like a perfect recipe to try.  The crumb topping is divine and the muffin is packed with flavor!
Ingredients:
  • 5 tablespoons butter, softened
  • 1/2 cup white sugar
  • 1 egg
  • 1 cup sour cream
  • 1/4 cup cinnamon roll coffee creamer, You can add 1/4 tablespoon cinnamon to regular vanilla creamer.
  • 1 3/4 cups flour
  • 1 1/2 teaspoons  baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt

Cinnamon Filling:
  • 1/2 cup brown sugar
  • 1/2 tablespoon cinnamon

Crumb Topping
  • 1/4 cup cold butter
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 1/4 teaspoon cinnamon
  • 1/2 cup flour
Cream Cheese Glaze
  • 2 tablespoon cream cheese, softened
  • 1 tablespoon milk
  • 1/2 cup powdered sugar.
 
 
 
Directions:
  1. Make crumb topping by combining all ingredients into a medium sized bowl.  Cut together with a fork until its nice and crumbly.
  2. In a small bowl mix all filling ingredients.
  3. Preheat oven to 375 degrees.
  4. Cream together butter and sugar in a large mixing bowl.
  5. Beat in egg,sour cream and creamer until well mixed.
  6. In a separate small bowl mix together flour, powder, soda and salt.
  7. Slowly mix in dry ingredients with wet, until well combined.  Batter will be thick.
  8. Pour enough batter into greased muffin tins to cover the bottom. (I got 8 muffins)
  9. Top each with a generous amount of filling and pour remaining batter on top of each.
  10. Sprinkle with crumb topping and bake for 25-30 minutes.
  11. When muffins have cooled mix all Cream Cheese Glaze ingredients together until smooth.
  12. Add glaze into a Ziploc bag.  Move all the glaze to one side of the bag making a piping bag.  Cut the tip and drizzle muffins.

Apple Cinnamon Roll Muffins

My husband was in need of more treats for a work potluck and I wasn't in the mood for anything extravagant.  I had the cinnamon rolls on hand but I thought they needed to be spruced up a bit.  I immediately thought of apples and decided apple pie filling on top would be delicious!   These were delicious and you could easily skip the step of cutting them up and just top the regular rolls.  However, I needed more than 16 and they look pretty!
 
 Ingredients:
  • 2 package refrigerated cinnamon rolls, 8 per pack
  • 1 granny smith apple, Diced
  • 6 tablespoon butter
  • 6 tablespoons brown sugar
  • 1/4 teaspoon cinnamon
Directions:  Preheat oven to 400 degrees.  Open cinnamon rolls and place frosting aside.  Cut each roll into 4 pieces and roll into small balls.  Place three pieces into a lightly greased muffing tin.  In a small sauce pan melt 2 tablespoons butter and add diced apples.  Saute for about 3 minutes, or until soft.  Remove from heat and sprinkle with cinnamon and 2 tablespoons brown sugar.  Stir apples until sugar is completely dissolved and top each muffin with mixture.  In the same sauce pan melt remaining butter and stir in remaining sugar until dissolved.  Top each muffin with a little more sauce and bake for 20 minutes.  Let cool for around 5 minutes and drizzle with frosting while still a little warm.

Double Chocolate Banana Muffins

I have been a little obsessed with baking lately however, most of my recipes are semi homemade.  I decided I wanted to prove to myself that I can bake from scratch and I succeeded!!  Like I have said before I usually take one bite of my  baked goods and pack them up for my husband to take to work.  He has been in a new branch for a while now and he went from managing around 7-10 to I think around 30-35 people.  I can no longer just make a dozen of something and I didn't have enough ingredients to make enough for everyone at his new office so let me tell you I have already eaten my fair share.  Maybe I should invest in some mini muffin pans. 

Ingredients:
  • 2 cups self rising flour
  • 1 cup sugar
  • 1 cup milk
  • 3/4 cup cocoa
  • 1/4 cup plain Greek yogurt
  • 1 mashed banana
  • 1 stick butter, melted
  • 1 package milk chocolate chips
  • 1 teaspoon vanilla

Directions:  Preheat oven to 400 degrees and add muffin liners to muffin pan.  Add all ingredients except chocolate chips to mixing bowl and mix on medium speed until smooth.  Fold in 3/4 bag of chocolate chips and scoop batter with an ice cream scoop into prepared liners.  Top with additional chips and bake for 20 minutes.

Garlic Parmesan Muffins

I absolutely hate when I get home from the grocery store and realize I forgot just ONE thing.  Of course this one thing happened to be the garlic bread that my husband has to have when eating any kind of pasta.  He has never been a fan of pasta so when I do make it I always add garlic bread.  No way am I packing up baby and making another trip so I raided the pantry and found self rising flour.  I remembered a recipe by Trisha Yearwood for Easiest Muffins and I decided to adapt it to more of a garlic bread muffin.  This is the end result and I have to pat myself on the back because these are scrumptious.

Ingredients: (this makes 6 muffins)
  • 1/2 cup softened butter
  • 1/2 cup plain Greek yogurt
  • 1 cup self rising flour
  • 3 tablespoons parmesan cheese
  • 1 teaspoon garlic powder
  • 1 clove garlic, minced
  • 1-2 tablespoons chopped chives or to taste
  •  pepper, to taste
  • cooking spray
 Directions:  Preheat oven to 400 degrees.  In a mixing bowl cream together butter and yogurt.  Slowly add in flour and mix well.  Add all garlic, cheese and salt and pepper and mix together.  Spray muffin pan and drop dough in with a ice cream scooper.  Bake for about 15 minutes or until tops are brown.

Apple Pie Cake Glazed Muffins

 
THE BEST MUFFINS I HAVE EVER MADE!!!!! I love baking with cake mix because it eliminates so much time and I have had a can of apple pie filling in my pantry that has been screaming use me for many months now.  This is such a simple recipe and it makes your house smell so wonderful.  Fall is just around the corner and this is a must try recipe.
 
Ingredients for Muffins:
  • 1 box yellow cake mix
  • 1 can apple pie filling (1 pound)
  • 1/2 cup plain Greek yogurt
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon 
 Ingredients for Glaze:
  • 4 tablespoons melted butter
  • 1 cup powdered sugar
  • 3/4 teaspoon vanilla
  • 2 tablespoons hot water
Directions:  Preheat oven to 350 degrees.  Add apple pie filling to mixing bowl and beat until the apple pieces are broken up into diced pieces.  Add cake mix, yogurt, vanilla, and cinnamon and beat until everything is mixed though out.  The batter should only have the apple chunks left.  Pour into muffin tins and bake for 30 minutes.  In separate bowl whisk together melted butter sugar, vanilla, and hot water until smooth.  Dip muffin tops into glaze and let harden.

Banana Cinnamon Chip Muffins

I always find myself having left over bananas because I despise soft ones.  I never seem to eat them all before they go from green to yellow!  Another semi homemade recipe that is to die for.  I actually made two bread loafs and six muffins.  Whenever I bake I only ever try one bite of whatever it is to make sure its edible and pack it up for my husband to take to work.  He is not a big fan of this because he can never actually enjoy the tasty treats.  So I decided to surprise him with some muffins and I am really glad I did because I ended up eating half of them.  I adapted this recipe from Betty Crocker

Ingredients:
  • 1 box yellow cake mix
  • 1/3 cup apple sauce
  • 3 tablespoons vanilla Greek yogurt
  • 3 eggs
  • 4 mashed bananas
  • 1/2 cup chopped walnuts (optional)
  • 1/2 bag cinnamon chips
Directions:  Preheat oven to 350 degrees.  In mixer add cake mix, applesauce, eggs, bananas, and Greek yogurt.  Mix until smooth.  Fold in walnuts and cinnamon chips.  Pour into greased bread pans or muffin tins.  Bake bread for 45 minutes and muffins for 30 minutes.

Cookers Note:  If you do not have Greek yogurt I would just add in some extra applesauce.  Sometimes when using applesauce the bread can tend to me a little dry so I added some yogurt because I always have some on hand.

Pumpkin Streusel Muffins


I love making these muffins because everyone thinks you spent all day baking.  These are so simple and perfect for any holiday party or gathering.  Impress your family and friends with this super easy recipe.
Ingredients:
  • 1 package spice cake mix
  • 1 15 ounce can pumpkin puree or pumpkin pie mix
Topping:
  • 3 tablespoons butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup flour
Directions:  Pre-heat oven to 350 degrees.  In large bowl mix together cake mix and pumpkin puree or pumpkin pie mix.  I have only found the pumpkin pie mix in a 30 ounce can so I use 1/2 of it.  Fill 3/4 of greased or paper lined muffin tins full of mixture.  In a separate bowl, mix all the topping ingredients together with a fork to form a crumbled mixture.  Sprinkle topping on top of muffin mixture.  Bake at 350 for 25 minutes.
