Walnut Crusted Banana Bread

I have made so many loafs of banana bread throughout the years and I have no idea why I haven't thought of this sooner.  The banana bread is perfectly moist and the walnut crust is divine.  This is definitely my new "go to" banana bread recipe.

Ingredients for Bread:
  • 3 ripe bananas
  • 1/3 cup melted butter
  • 1/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1/4 teaspoon cinnamon
  • 1 1/2 cups all purpose flour
 
Ingredients for Pecan Crust:
  • 2 tablespoons butter, softened
  • 1/4 cup brown sugar
  • 1/4 cup flour
  • 1/2 cup chopped walnuts
  • dash of cinnamon
 
Directions:
  1. Preheat oven to 350 degrees.
  2. In a large mixer beat bananas, butter, egg and sugars until smooth.
  3. Mix all remaining dry ingredients into a large bowl and stir.
  4. Slowly beat in dry mixture until smooth.
  5. Pour mixture into a greased 4x8 loaf pan.
  6. Add all crust ingredients into a bowl and mix together with a fork until crumbly.
  7. Sprinkle the banana bread batter with the crust mixture evenly.
  8. Bake for 1 hour or until toothpick comes out clean.

Whole Wheat Banana Honey Muffins

Confession:  I really didn't think I was going to like these at all.  I am not a big fan of whole wheat flour but these are AMAZING.  My little guy has already scarfed down a couple today and best of all I don't feel  guilty one bit. 

Ingredients:
  • 1 3/4 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup vegetable oil
  • 1/2 cup honey
  • 2 eggs
  • 2 bananas, mashed
  • 1/4 cup hot water
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla

Directions:
  1. Preheat oven to 325 degrees.
  2. In a large bowl mix flour, soda, and salt until well combined and set aside.
  3. In a large mixing bowl blend eggs, oil, honey bananas and cinnamon until well combined.
  4. Slowly add in dry ingredients until well combined adding in water slowly.
  5. Pour batter into greased muffins tins about 3/4 full.
  6. Bake for 15-20 minutes.  Mine were perfect at 15 minutes.

Oatmeal Cinnamon Swirl Banana Bread

Definitely my new favorite banana bread recipe.  It came out so moist and I love the hint of cinnamon.
 
 Ingredients:
  • 2 cups self rising flour
  • 3 large ripe bananas, mashed
  • 1/2 cup packed brown sugar
  • 3 eggs
  • 1 cup uncooked old fashioned oats
  • 1/4 cup pumpkin or apple puree

Cinnamon Swirl
  • 1/3 cup sugar
  • 1 tablespoon cinnamon

Directions:  Preheat oven to 350 degrees.  Add eggs, bananas, pumpkin/apple puree, and brown sugar to mixing bowl and mix until smooth.  Slowly add flour and oats until smooth.  Pour 1/2 the batter into bread pan and sprinkle with half of the cinnamon mix.  Pour remaining batter into pan and top with remaining cinnamon mix.  Bake for about 50-60 minutes.
