Cinnamon and Chocolate Chip Cookie Crisps

My husband has been talking non stop about these amazing cookies he found at the store.  I have been looking all over our local store and I finally found them.  They really are AMAZING.  I immediately went online looking for cookie chip recipes and came across this one by Martha Stewart's daughter.  They did not taste like the bagged cookies I found however, they were extremely delicious.  A perfect mix of crunchy and chewy!  Cinnamon chips and Crisco were my only changes.

Ingredients:
  • 2 cups Crisco
  • 3 cups packed light-brown sugar
  • 1 cup granulated sugar
  • 4 large eggs
  • 2 teaspoons pure vanilla extract
  • 3 1/2 cups all-purpose flour
  • 1 1/2 teaspoons salt                                      
  • 2 teaspoons baking soda                                     
  • 3/4 cup chocolate chips
  • 3/4 cup cinnamon chips
Directions: Preheat oven to 375 degrees. Cream together Crisco and sugars until smooth.  Beat in eggs and vanilla. Slowly mix in dry ingredients and gently fold in chips.  Drop by the spoonful onto a greased cookie sheet or a sheet lined with parchment paper and bake for 11-12 minutes.  Sides will be golden brown!

Powdered Sugar Maraschino Cherry Cookies

This recipe comes from my Great Grandmother Caroline, who I just so happen to be named after!  Even though I was never lucky enough to meet her, I know she must of been an amazing woman, mother, and friend.  This recipe is quite delicious.  The texture reminds me of the frosted soft and chewy cookies at the grocery stores but, tastes like the amazingness of Maraschino Cherries!

Ingredients:
  • 1 cup Crisco
  • 1 cup powdered sugar
  • 1 small jar Maraschino Cherries, chopped
  • 1 teaspoon vanilla
  • 1 egg, beaten
  • 2 cups flour
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon baking soda

Directions:  Cream together Crisco and sugar.  Add in vanilla and beaten egg.  Mix in flour, tartar and soda.  Gently fold in Maraschino Cherries.  Make into a loaf and cool in fridge overnight.  Slice and bake at 300 degrees for 12-14 minutes.  Cookies will be lightly brown at the edges.

Peanut Butter Cookies

I never realized how easy peanut butter cookies are to make.  Why have I only made the pre-made dough ones?  I loved these and will be making them many more times to come.  I will need to learn how to make the scissor lines a little cleaner though!

Ingredients:
  • 1/2 cup shortening
  • 1/2 cup white sugar
  • 1/2 cup brown sugar, firmly packed
  • 1/2 cup peanut butter
  • 1 egg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 1/4 cups flour, sifted

Directions:  Preheat oven to 375 degrees.  Cream shortening and stir in sugars.  Beat in peanut butter, egg, soda, powder and gradually stir in flour.  Form batter into balls between the palm of your hands.  Place on greased cookie sheet and press with the back of a fork, making scissor lines.  Bake for 12 minutes or until edges are lightly browned.

Grandma Helens Chocolate Chip Cookies


These are hands down the most amazing chocolate chip cookies EVER!!  My Grandma passed when I was very young so, I only have a handful of memories with her.  Every one of those memories revolves around these cookies and French Vanilla ice cream.  My Grandpa had a serious sweet tooth that was definitely passed on to my Mom, who then passed it along to me!  My siblings and I will never forget dessert after ever meal, breakfast included when we stayed with the Grandparents.  We spent our summer days swimming in the lake, the nights catching fireflies followed by our nightly art show.  I will never forget the smiles on their faces as we played and laughed.  My Mom would make these cookies on a regular basis and I am reliving memory lane all over again, smelling and tasting these cookies.

Ingredients:
  • 1 cup flour plus 3 tablespoons
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup white sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 cup Criso (Cookies are meant to be delicious, not healthy.  USE CRISCO!)
  • 6 oz chocolate chip cookies
 
Directions:  Preheat oven to 350 degrees.  Cream together Crisco, sugars, egg, and vanilla.  Mix in all remaining dry ingredients until smooth.  Fold in chocolate chips and add my the spoonful to a greased cookie sheet or a sheet lined with parchment paper. Bake for 10-12 minutes.

Cookers Note: If you add just a pinch of cream of tartar to the dry ingredients you will have a little fluffier cookie!

Chocolate Chip Cookies

These were absolutely amazing.  I knew this recipe would be a winner because the recipe stated, "cake like chocolate chip cookies."  I had to make a couple changes to the original recipe because I only had self rising flour.  If you only have regular flour use the same amount and add 1/2 teaspoon baking soda in 1 tablespoon hot water. 

 
Ingredients:
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 1/2 teaspoon salt
  • 1 1/2 cups self rising flour
  • 1/2 cup butter, softened
  • 1-2 cups chocolate chips (I usually use about 1 1/2 cups)
  • 1/2 teaspoon vanilla
  • 1/2 cup nuts, optional
 
Directions:  Preheat oven to 350 degrees.  Cream sugars and butter together.  Mix in eggs, vanilla and flour until thoroughly mixed.  Gently fold in chips and nuts.  Drop by the tablespoon on greased cookies sheet and bake for 9 minutes.

Valentine Cookies


Logan is going to his first ever Valentines Day Party tomorrow!!!!  I need to bring a treat, So I decided on these amazing treats.  If you follow my blog, you know I love me some Cake Cookies!  I had all the ingredients on hand so ready, set, boom...

Ingredients:
  • 1 box white cake mix
  • 1 stick butter, melted
  • 1 egg
  • 1 teaspoon vanilla
  • 3 Tbsp flour
  • 1/4-1/2 cup sprinkles
Directions:  Preheat oven to 350 degrees. Mix all ingredients except sprinkles until smooth. Roll batter into 1 inch balls and roll in the sprinkles. Place on cookie sheet, bake for 8 minutes and let cool on cookie sheet.

White Chocolate Macadamia Nut Cookies


I have been seeing a lot of recipes for pudding cookies and as you all already know I love cake mix cookies.  So I decided to mix the two and they are a match made in heaven.  My husband is supposed to take these to his Christmas party but he might not have any to take.  A perfect recipe for the holidays that will for sure be a hit. 
 
Ingredients:
  • 1 box yellow cake mix
  • 1 small box white chocolate pudding mix
  • 1 bag white chocolate chops
  • 1 cup macadamia nuts, chopped
  • 2 tablespoons brown sugar
  • 1 stick butter, softened
  • 2 eggs
 
Directions:  Preheat oven to 350 degrees.  In a large mixing bowl add cake mix, pudding and brown sugar and mix together.  Add eggs and butter and beat together on low.  Fold in chocolate chips and nuts.  Drop by the tablespoon onto cookie sheets and bake for 12 minutes.  Cool and enjoy!

Double Chocolate Cake Cookies

Cake cookies are the best and I always seem to have all of the ingredients at all times!  They taste like a mix between brownies and chocolate cake.  So incredibly easy and they taste fantastic. 

Ingredients:
  • 1 box Devils food cake mix
  • 1/3 cup vegetable oil
  • 2 eggs
  • 1 bag milk chocolate chips (minus the handful you eat right out of the bag!!)
Directions: Preheat oven to 350 degrees. In a mixing bowl add all ingredients and mix until smooth. Drop cookies by the spoon full onto a cookie sheet. Bake for 12 minutes and let cool on cookie sheet.

Rocky Road Cake Cookies

Fact:  I hate chocolate cake.
Fact:  I love chocolate cake cookies.
When I was getting ready for labor and delivery our Doula told us to come up with a code word/saying that would act as me asking for an epidural.  This would have to be said three times before they would even consider giving it to me because we were planning for all natural.  This code had to be something that your spouse would know you were never say/ask for in a normal situation.  I used "I want chocolate cake" because my husband knows how much I hate it.  I decided to make chocolate cake cookies a while back because I figured I would dislike them too however, I found myself eating a majority of them because they taste so much like Grandma Cookies!!

Ingredients:
  • 1 box chocolate cake mix
  • 1/3 cup vegetable oil
  • 2 eggs
  • 1/4 cup chopped walnuts
  • mini marshmallows

Directions:  Preheat oven to 350 degrees.  In a mixing bowl add all ingredients except marshmallows and mix until smooth.  Drop cookies by the spoon full onto a cookie sheet.  I would only do 8 per sheet because they puff out pretty good.  Flatten the cookies lightly with a spoon and add 5 marshmallows on top.  Bake for 10 minutes and let cool on cookie sheet.

Snickerdoodle Cake Cookies

This are simply divine!!  I really could eat them all.  I am so glad my husband is taking them out of the house tomorrow.  They are like individual snickerdoodle cakes.  AMAZING
 
Ingredients
For Cookies:
  • 1 box white cake mix
  • 1 stick butter, melted
  • 1 egg
  • 1 teaspoon vanilla
  • 3 Tbsp flour
 
Coating:
  • 1/4 cup sugar
  • 2 teaspoons cinnamon
 
Directions:  Preheat oven to 350 degrees.  Mix all cookies ingredients until smooth.  Roll batter into 1 inch balls and roll in the cinnamon sugar coating.  Place on cookie sheet and lightly flatten.  Bake for 8 minutes and let cool on cookie sheet.

Rolo Stuffed Sugar Cookies

I said in an earlier post that I only ever take one bite of my treats before I pack them up for my husband to take to work.  Well, I take it back I ate lots of these!!!  Luckily I ended up putting to many cookie balls on my cookie sheet so I had some ugly ones to eat for myself.  These are simply DELIGHTFUL.  I saw a picture of these on pinterest and I knew I had to make the ASAP.  I still haven't looked at the recipe online because I knew exactly how I was going to make them. 

Ingredients:
  • 1 package sugar cookie dough
  • 24 rolo candies
  • Cinnamon and sugar mix
Directions:  Preheat oven to 350 degrees.  Unwrap rolo candies and mold sugar cookie around the rolo into a ball.  Coat with cinnamon and sugar mix.  Repeat until finished.  Place on cookie sheet and bake for about 11 minutes or until edges are light brown.

Peanut Butter Sandwich Cookies


My brother and I share the same fascination for peanut butter so I wanted to make something extra peanut buttery for the both of us.  These are extremely rich and heavenly and did I mention the filling tastes like reese's pieces.  I found a recipe online for similar cookies but I shortened it up a bit to make them semi-homemade.
Ingredients:
  • 2 packages ready to bake peanut butter cookies
  • 1 1/4 cup powdered sugar
  • 3 tablespoons margarine
  • 3 tablespoons heavy whipping cream
  • 1/4 teaspoon vanilla
  • 1/2 cup creamy peanut butter
Directions:  Bake cookies as directed.  In medium bowl cream together sugar and margarine.  Add vanilla, peanut butter, and whipping cream and stir until smooth.  When cookies are done and cooled spread filling onto half of the cookies, then place the other half of cookies on top to form a sandwich.
Cookers Note:  I think this would taste great with oatmeal or chocolate chip cookies as well.  If you really want to make then fancy dip half of the cookie in melted chocolate.
