Black Bean and Egg Sweet Potato Hash Cups

This is a great "on the go" breakfast muffin, packed with protein and vitamins!  I really liked these however, I can not get my little guy to take a bite.  He literally eats EVERYTHING and he loves all three of these ingredients separately.  I will definitely be making these at the beginning of the week for snacks.

Ingredients:
  • 1 small sweet potato, peeled and grated
  • 1 can black beans, drained and rinsed
  • 1/4 cup shredded cheddar cheese
  • 2 eggs
  • salt and pepper to taste

Directions: Preheat oven to 350 degrees and mix all ingredients thoroughly in a medium bowl.  Add mixture about 3/4 of the way full into a lightly greased muffin pan and bake for 20-25 minutes.

Spinach Tomato Avocado Scramble

 
My little guy LOVES eggs so, I decided to add in some spinach one day for some extra nutrients.  He can also eat a whole avocado in one setting so I added that for good measure.  This is one of my new favorite breakfasts and I love that my little guy is getting a great nutritious start to the day! 
 

Ingredients:
  • 3 eggs
  • 1 small handful spinach, lightly diced
  • 5 cherry tomatoes, cut in fours (you can always add more)
  • 1/2 avocado, diced
  • 1 tablespoon milk
  • 1/2 tablespoon butter
  • salt and pepper, to taste
Directions:

In a large bowl whisk together eggs, milk, spinach and tomatoes.

Melt butter over medium heat in a large skillet and add egg mixture.

Let cook for about a minute and begin to scramble with a wooden spoon.

Cook eggs until no longer runny, stirring frequently.

Top eggs with avocados and serve.

Avocado and Egg Breakfast Sandwich

I have no idea why it took me so long to think of this.  I rarely have bacon or ham in the house for breakfast sandwiches so after rummaging through the fridge I thought of this.  My little guy and I ate this so fast and it is my new favorite. 

Ingredients:
  • 2 slices bread, toasted
  • 1 egg
  • 2 slices cheese from block, or 1 slice pre-packaged
  • 1/2 avocado
  • 1 tablespoon salsa
  • small dab of butter

Directions:

Toast 2 slices of bread.

In a small skillet fry egg with a tiny dab of butter.

Meanwhile, add salsa and avocado into a small bowl and mix together.

Lather avocado mixture onto both slices of bread.

Top one side with cheese and egg.

Add remaining piece of bread and enjoy.

Microwavable Breakfast Sandwiches

 
Did you know you can cook eggs in the microwave?  I had no idea!  I have a love-hate relationship with my microwave.  I love the convenience of it but hate the wave part of it.  You know, nutrient killing waves.  Anyways, this is delicious and easy!
 
Ingredients:
  • 2 slices bread
  • 1 egg
  • 2 slices deli ham
  • 1 slice cheddar cheese
Directions:  Toast bread and set aside.  Whisk egg in a microwavable bowl, preferably a small circular one.  Heat for 45 seconds, place onto one bread slice and top the other with the ham and cheese.  Return to microwave and heat for 20 seconds and serve.

Breakfast Sandwich

This is such an easy breakfast that the whole family will love.  Also, its a one dish breakfast!!  Runny yolks, melted cheese, delicious ham on croissant squares!!  My husband and I both love this and I find myself making this all the time, even for dinner. 

Ingredients for Two:
  • 2 eggs
  • 2 croissant square loafs, sliced (normal bread works too!)
  • 4 slices deli style ham
  • 4 slices cheddar cheese

Directions:  In a large lightly greased skillet saute eggs until cooked to your desired consistency.  For runny yolks, about a minute on each side. Place cheese slices on each piece of croissant and add cooked egg on top of one side.  Add ham slices to skillet and saute for a couple minutes.  Remove ham and place on top of egg and place the remaining croissant slice with cheese on top.  Place sandwich on skillet and saute on each side for one minute and serve!

Apple Pancakes

 
Right before I was going to whip up some pancakes I was browsing Pinterest and came across this recipe.  I had everything ready minus the apples so, why not give it a whirl?  I thought they were fantastic, my husband wasn't a huge fan but my son ate them right up.  Now when my husbands asks for pancakes I can make these for me!!!
 
Ingredients:
  • 1 cup pancake mix, (just add water kind)
  • water
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon cornstarch
  • 1 small apple, peeled and cored
Directions: Prepare pancake mix according to package directions and mix in all other ingredients except apples.  When batter is smooth dip apples using a toothpick and place on a griddle, lightly coated with non stick spray.  Cook until golden brown on each side.  Serve plain or with maple syrup.

Breakfast Smoothie

I am absolutely addicted to smoothies and drink at least one of my meals a day.  They are refreshing, sweet, delicious and extremely healthy.  They definitely satisfy my hunger and my sweet tooth.  The possibilities are endless and you can even use milk for more of a milkshake feel.

Ingredients:
  • 2 small hand fulls baby spinach
  • 1 carrot, broken up
  • 1/2 banana
  • 1 cup frozen berries
  • 1/4 teaspoon fresh ground ginger
  • 1 cup water
  • ice, if you want a thicker consistency
Directions:  Add all ingredients to blender, cover with water and puree until smooth.

Apple Cinnamon Roll Muffins

My husband was in need of more treats for a work potluck and I wasn't in the mood for anything extravagant.  I had the cinnamon rolls on hand but I thought they needed to be spruced up a bit.  I immediately thought of apples and decided apple pie filling on top would be delicious!   These were delicious and you could easily skip the step of cutting them up and just top the regular rolls.  However, I needed more than 16 and they look pretty!
 
 Ingredients:
  • 2 package refrigerated cinnamon rolls, 8 per pack
  • 1 granny smith apple, Diced
  • 6 tablespoon butter
  • 6 tablespoons brown sugar
  • 1/4 teaspoon cinnamon
Directions:  Preheat oven to 400 degrees.  Open cinnamon rolls and place frosting aside.  Cut each roll into 4 pieces and roll into small balls.  Place three pieces into a lightly greased muffing tin.  In a small sauce pan melt 2 tablespoons butter and add diced apples.  Saute for about 3 minutes, or until soft.  Remove from heat and sprinkle with cinnamon and 2 tablespoons brown sugar.  Stir apples until sugar is completely dissolved and top each muffin with mixture.  In the same sauce pan melt remaining butter and stir in remaining sugar until dissolved.  Top each muffin with a little more sauce and bake for 20 minutes.  Let cool for around 5 minutes and drizzle with frosting while still a little warm.

Logan's Banana Oatmeal


Have I mentioned how much my little guy loves bananas?  We seriously go through around 3-4 a day.  Banana smoothies, oatmeal, pancakes and toast are some of his favorites.  I love oatmeal and luckily my little man eats EVERYTHING.  I started just adding chopped bananas on top of the oatmeal however, letting them cook with the oats really ups the banana flavor.  Logan and I both love it!
 Ingredients:
  • 1 cup oats
  • 1 cup water
  • 1/8 teaspoon cinnamon
  • 1/8 teaspoon vanilla
  • 1/2 banana, chopped
  • milk, to taste * we always use vanilla unsweetened almond milk*
Love Him!!
Directions:  In a medium saucepan bring water to a boil.  Add cinnamon, vanilla and bananas and give a quick stir.  Stir in oats, cover and cook on low for around 5 minutes.  Place in bowl and top with milk!

Hashbrown Casserole


My husband rarely has a request for dinner, so when he asked for a breakfast casserole I obliged.  I decided to stick to the basics because he is not a huge fan of veggies.  This was extremely delicious and we all gobbled it down, including our 14 month old son. 

Ingredients:
  • 1 package breakfast sausage (Jimmy Dean)
  • 1 1/2 cups frozen hash browns, thawed
  • 6 eggs
  • pepper, to taste

Directions:  Preheat oven to 350 degrees. In a large skillet brown sausage until completely cooked through.  In a large bowl whisk eggs together and add sausage.  Place hash browns in a lightly greased casserole dish and pour egg/meat mixture over the top.  Bake for 30 minutes then top with cheese and bake for an additional 15 minutes.

Overnight Strawberry Almond French Toast






This recipe is adapted from my Overnight French Toast.  We had some friends coming over for brunch and I wanted something yummy, but not so sugary for the little ones.  I loved the overnight french toast I made awhile back, so I lightened it up with honey and less butter.  I will say I like the full fat version better because I am not a huge fan of honey.  The only difference with the lighter version is the bottom layer is a little softer because it doesn't get the crisp from the brown sugar bottom.  The bottom layer is more like a pudding and the top layer is crisp like regular french toast. 
 
Ingredients:
  • 3 tablespoons melted butter
  • 1/3 cup honey
  • 1 loaf texas toast or french cut bread
  • 4 eggs
  • 1 cup almond milk
  • 1 teaspoon vanilla
  • 1 bag frozen sliced strawberries, thawed
  • Cinnamon
Directions: Pre Heat oven to 350 degrees. Mix eggs, milk, and vanilla in small bowl. In separate bowl melt butter in honey. Coat bottom of 9 by 13 baking dish with honey mix. Cover honey with a layer of bread then pour half of the egg mix over the top. Sprinkle with strawberries and cover with second layer of bread. Pour remaining egg mixture over the top and sprinkle with cinnamon. Cover over night and bake covered for 30 minutes and 15 minutes uncovered.

Semi Homemade Biscuits and Gravy


Every time my husband and I go out for breakfast he always orders biscuits and gravy.  We have had some really good ones and some really bad ones.  The good ones always have thick and creamy gravy with lots of sausage and the bad ones are the opposite.  I decided to surprise him one morning and we were  both pleasantly surprised with how fantastic and simple it was to make. 

Ingredients:
  • 1 package refrigerated biscuits
  • 1 lb breakfast sausage
  • 1 package country style gravy mix
  • 1 cup cold water
  • 1 1/2 cups cold milk
  • 1/4 teaspoon paprika
  • Tabasco, to taste
  • pepper, to taste

Directions:  Bake biscuits according to package.  In a large skillet brown sausage over medium heat.  Sprinkle sausage with gravy mix and thoroughly mix.  Slowly stir in water followed by milk.  Season with paprika, Tabasco, and pepper.  Pour gravy over biscuits and serve.

Leftover Breakfast Burrito

I have already done a very similar post for bacon, egg and cheese burritos. Breakfast in a tortilla is my all time favorite and it always brings me back to my childhood.  I already plan on making these for Logan before school just like my Mom did for my siblings and I.  Every morning I looked forward to breakfast and loved the fact that I got a fantastic meal on the go.

Ingredients:
  • Tortillas
  • 4 eggs
  • 1 cup ham, cubed
  • 2 tablespoons milk
  • 1 cup ham, diced
  • 1 large russet potato, peeled and chopped
  • shredded cheese
  • salt and pepper
  • 1 tablespoon vegetable oil

  • Directions:  In a microwavable bowl microwave potatoes for about two minutes to soften.  Add potatoes to a large skillet with 1 tablespoon vegetable oil.  Cook until crisp and tender.  Whisk eggs and milk together and scramble in lightly greased skillet until no longer runny.  Remove eggs from skillet and add ham until heated through.  Warm tortillas in microwave or stove top and add desired amount of ham, eggs, potatoes and cheese.

    Chorizo and Egg Burritos

    Have you ever thought about what your last meal would be if you could choose it?  This would be mine.  My Mom and Dad made these all the time for us when we were little and I really believe some of my childhood friends were won over by these burritos.  I swear whenever I talk to someone about my Dad they always say, " I remember those burritos he would always make."  If you have Cholula on hand make sure to give it a little dab because, everything is better with Cholula!

    Ingredients:
    1 10 oz package of Chorizo or Soyrizo
    5-6 eggs, beaten
    tortillas, heated on pan as needed
     
    Directions:  In a large skillet fry chorizo until broken up and browned.  Add eggs stirring until cooked, serve with warmed tortilla.

    Fancy Egg In a Hole

    I can not even tell you how often I make this for breakfast or lunch.  I was introduced to these bad boys in high school.  My friends mom would always make these for breakfast the morning/afternoon after our sleepovers.   You can adapt this recipe to whatever ingredients you have on hand.

    Ingredients:
    • 1 slice bread
    • 1 egg
    • pinch of shredded cheese
    • 1/2 avocado
    • salsa
    • non stick spray

    Directions:  With a biscuit cutter or the rim of a glass, press a hole in the center of the slice of bread.
    Heat a small skillet over medium heat and spray with non stick spray.  Place the piece of bread on skillet and crack the egg into the center of the hole.  After a minute, flip the bread with a spatula and sprinkle with cheese.  Cook until the whites are cooked through and the yolks are still soft.  Top with avocado and salsa and serve!

    Cookers Note:  I usually use the cap to the non stick spray to press the hole in the bread!

    Overnight Breakfast Eggs

     

    This is another recipe my Aunt Kathy made while we were on vacation in Iowa.  My husband loved it as did he love all of her cooking!!  He has been asking me every week since we have returned to make this.  I love that you put it together the night before and all you have to do is preheat the oven in the morning.  I however made this for dinner so I made the sausage the night before and assembled in the morning letting it sit until dinner time.  The recipe I am going to post serves 12-15 so feel free to half the recipe.  The picture below is half the original recipe considering I cook for two!
     
    Ingredients: (Servings 12-15 half recipe if needed)
    • 3/4 cup seasoned bread crumbs
    • 2 lbs ground breakfast sausage (I substitute for ground breakfast chicken)
    • 1/2 cup chopped onion (optional)
    • 2 cups shredded cheddar cheese
    • 10 eggs
    • 2 3/4 cup milk
    • 3/4 tsp dry mustard
    • 1/2 tsp salt
    • 1 package hash browns
    • 1 can cream of mushroom soup
     
    Directions:  Prepare this the night before you serve this.  Put croutons in a 9 by 13 buttered baking dish.  Brown breakfast sausage and onion and drain fat.  Spread over croutons.  Sprinkle with 1 cup cheddar cheese.  Mix eggs, 2 1/4 of milk, dry mustard and salt.  Pour over cheese/sausage.  Then spread hash browns over top.  Mix cream of mushroom and remaining milk and pour over hash browns.  Top with remaining cheese.  Cover and refrigerate over night.  Bake at 350 for 1 hour and 30 minutes.

    Overnight Blueberry French Toast





    This was simply delicious.  I have a feeling this will be a staple for Easter and Christmas mornings.  I found this recipe on pinterest and only added blueberries in between the layers of toast.  The bottom layer is caramelized and the top is crisp and delicious.  This is a must try!

    INGREDIENTS:
    • 1/2 cup melted butter
    • 1 cup brown sugar
    • 1 loaf texas toast or french cut bread
    • 4 eggs
    • 1 1/2 cup milk
    • 1 teaspoon vanilla
    • 1 cup blueberries
    • Cinnamon
    DIRECTIONS: Pre Heat oven to 350 degrees. Mix eggs, milk, and vanilla in small bowl.  In separate bowl melt butter and mix in brown sugar.  Coat bottom of 9 by 13 baking dish with brown sugar mix.  Cover sugar with a layer of bread then pour half of the egg mix over the top.  Sprinkle with blueberries and cover with second layer of bread.  Pour remaining egg mixture over the top and sprinkle with cinnamon.  Cover over night and bake covered for 30 minutes and 15 minutes uncovered.

    Orange Sweet Roll French Toast

    I had a huge craving for Pillsbury Orange Sweet Rolls and I could not resist as I walked past them at the store.  I went home and baked them and ate one and could not stand to see them go to waste.  Every Saturday my husband always asks for Pancakes, Waffles, or French Toast.  I decided I would try french toast with the left over rolls.  They were AMAZING!!!  I usually opt for oatmeal or toast but I caved and had some myself.

    Ingredients:
    • 1 package Pillsbury Orange Sweet Rolls with icing
    • 3 eggs
    • 2/3 cup milk
    • Maple Syrup

    Directions:  Bake rolls as directed on package.  Cool completely and cut in half.  In mixing bowl whisk eggs, milk, and 2 tablespoons of maple syrup together.  Dip rolls into mixture coating completely and transfer to griddle/pan on medium heat for about two minutes on each side.  Meanwhile I heated Maple syrup and icing together in the microwave for syrup topping.  I did not give an amount of syrup because everyone prefers certain amounts.  *Sprinkle with powdered sugar if desired*

    Easy Apple Cinnamon French Toast


    I fell in love with Apple Cinnamon French Toast in Florida.  We went out for breakfast one day and I ordered this and it was fantastic.  This was my attempt  and it was really good and easy.
    Ingredients:
    • 1 package Hormel Country Crock Cinnamon Apples (at Safeway they are located by the roasted chickens)
    • 2 eggs
    • 1/2 cup milk
    • 6 pieces bread
    • 1/2 teaspoon vanilla
    • maple syrup

    Directions:  Break eggs into medium bowl beat with fork.  Stir in milk and vanilla.  Over medium-low heat, heat griddle or skillet coated with a thin layer of butter or margarine.  Dip one piece of bread into bowl and coat each side evenly.  Transfer to griddle or skillet and cook until golden brown.

    Bacon Egg and Cheese Burritos


    Growing up my mom always made us breakfast burritos before school.  They are simple, delicious, and easy to eat on the go.  My husband was not accustomed to breakfast burritos so he jokes with and me and says "just because you are Mexican doesn't mean you have to put everything in a tortilla."
    Ingredients:
    • Tortillas
    • 6 eggs
    • 1/2 package bacon
    • shredded cheese
    • 1/3 cup milk
    • salt and pepper
    • Salsa
    Directions: In medium bowl whisk eggs, milk, and salt and pepper.  Cook bacon on skillet or griddle.  Scramble eggs in separate pan.  Place cooked eggs on heated tortilla with two pieces of bacon.  Sprinkle with cheese and salsa.  Fold the bottom of the tortilla up and fold the two sides over the top of the bottom making a burrito.  Wrap in a paper towel and enjoy.
    Cookers Note:  I also make these with ham, Jennie-o Sausage, or turkey bacon.  For the ham and sausage I dice the meat up and cook it into the eggs then sprinkle with cheese and salsa.
