French Onion Beef Stroganoff

I was originally planning on making a recipe from The Pioneer Woman's blog however, I forgot a few essentials at the store......  I guess having a list doesn't always work the way you want.  As I started pulling out all the ingredients I would need I found myself in a bit of a pickle.  Pantry raiding had commenced and I found myself whipping up this delicious meal instead.

Ingredients:
  • 1/2 bag egg noodles
  • 1/2 small yellow onion, diced
  • 2 garlic cloves, minced
  • 1 lb ground beef
  • 1 can condensed french onion soup
  • 1 cup sour cream
  • 1 tablespoon olive oil
  • salt and pepper, to taste
  • paprika, for garnish

Directions:
  1. Boil noodles according to package directions and set aside.
  2. In a large skillet heat olive oil over medium heat.
  3. Stir in onions and garlic until they start to sweat and add ground beef.
  4. Saute beef until cooked throughout and stir in soup and sour cream.
  5. Add salt and pepper to taste and bring to a boil.
  6. Reduce heat and simmer for about 5-10 minutes.
  7. Add in noodles until completely coated and serve.

  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning

Directions:
  • Boil noodles according to package instructions.
  • Saute ground beef until cooked through and add all remaining ingredients.

Triple Meat Red Sauce

I am absolutely in love with this sauce and it is extremely easy.  My father in law raved about this and my husband, who claims he doesn't like pasta went for a second helping.  Spaghetti is my all time favorite leftover meal and this was even better the next day.  This makes ALOT of sauce so, I ended up freezing half of it.

Ingredients:
  • 1 lb ground Italian sausage
  • 1 lb ground beef
  • 1/2 cup diced prosciutto
  • 2 jars favorite marinara
  • 1 28oz can crushed tomatoes
  • 1 large sweet onion, diced
  • 3 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder

Directions: In a large skillet brown beef and sausage with onions.  When meat is cooked throughout add 1/4 of meat mixture, 2oz of prosciutto and garlic into a food processor, blend together until crumbly.  Add all remaining ingredients and blended meat into a lightly greased crock pot.  Cook on low for 6-8 hours and serve over noodles.

Sloppy Joe's

Who doesn't love Sloppy Joe's?  Growing up I would always get so excited for Sloppy Joe night.  For the last couple years I have always just bought the seasoning mix and they never compared to the ones from my Mom made us.  The other day I suddenly realized her secret ingredient, TOMATO SOUP.  These were delicious and definitely brought  me back to our family dinners.

  • 1 can tomato soup
  • 1/2 small onion, diced
  • 1 clove garlic, minced
  • 1 tablespoon Worcestershire
  • 1 tablespoon BBQ sauce
  • 1 tablespoon ketchup
  • 1 teaspoon ground mustard
  • 1/4 teaspoon garlic powder

Mexican Jambalaya

Wasn't really quite sure what to call this dish, so Mexican Jambalaya it is.  My husband does not like bell peppers however, he loves the filling of stuffed peppers.  This was my attempt at satisfying his craving for pepper less stuffed peppers.  MISSION ACCOMPLISHED!

Ingredients:
  • 1 lb ground beef
  • 1 cup white rice, cooked
  • 1 16 OZ jar salsa, I use Pace Picante
  • 1 small can, diced green chilies
  • 1 can diced tomatoes
  • 1 teaspoon cumin
  • 1/2 teaspoon onion powder
  • green onions for garnish
  • cheese for garnish

Directions:  Brown beef in a large skillet over medium heat.  Add all remaining ingredients and let simmer over medium heat, stirring occasionally for 10 minutes.  Garnish with cheese and onions.

Baked Tacos

Have I mentioned how much I love Pinterest?  I am always finding delicious recipes and dinner ideas.  I came across this one and decided to give it a try, since I was making regular tacos anyways this week.  I love tacos, but tacos with melted cheese are to die for.  I did bake the corn tortillas like she did in the link and I was not a huge fan, so next time I will just buy the flat bottom taco shells.

Ingredients:
  • 1 package flat bottom taco shells
  • 1 lb ground beef
  • 1 can refried beans
  • 1 4oz can diced green chilies
  • 1/2 small sweet onion, diced
  • 1 can diced tomatoes, drained
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • Favorite Toppings

Directions:  Preheat oven to 400 degrees.  In a large skillet brown beef with chilies and onions.  Season beef and stir in tomatoes and refried beans.  Spoon mixture into each taco shell and place into a 9x13 baking dish.  Sprinkle tacos with cheese and bake for about 10 minutes.  Add your favorite toppings and serve.

Whenever I get together with other Mamas, I always end up asking about their dinner ideas, and this was the latest idea I received.  My husband gobbled this down and my son was literally licking his fingers.  I will say we have another winner!

  • 2 tablespoons butter (if adding mushrooms)
  • 1 can cream of mushroom soup
  • 1 cup sour cream
  • 1 cup beef broth
  • 1/4 teaspoon ground mustard

Directions:  Boil noodles according to package instructions.  In a large skillet melt butter and saute mushrooms until soft, set aside.  Add ground beef and onions to skillet and cook until beef is cook through.  Add soup, sour cream, broth, and seasonings to seasoning to a medium bowl and whisk together until blended together.  Pour over ground beef and heat over medium heat for about 5 minutes stirring occasionally.  Serve over noodles and enjoy.
