Semi Homemade Chicken and Wild Rice Soup

 
I have been craving this soup for a long time now so I decided to finally make some.  I did not have much time for dinner and I had the wild rice soup mix in the pantry ,so I just added what I had around the house!  It turned out fantastic.  Definitely an easy meal to make especially as fall moves on in.  Husband approved.  This makes a ton I was able to feed 3 and take an extra cup for lunch while still freezing half for another fall day!!!

Ingredients:
  • 1 package Bear Creek Creamy Wild Rice Soup Mix
  • 8 cups water
  • 1/2 cup cream cheese
  • 1/2 cup milk
  • 1 8oz can of mushrooms
  • 1 bag frozen mixed vegetables (I used carrots, peas, corn, and green beans)
  • 1 lb cooked chicken

Directions:
Bring 8 cups water to a boil in large pot then whisk in soup mix.  Add all vegetables and chicken then simmer on low heat for about 15 minutes.  Add in milk and cream cheese and stir until cream cheese dissolves.  Let simmer on low for about 5 minutes and serve!

Pork Chops with Applesauce Stuffing


I rarely ever make pork chops because I am not a huge fan of them.  However once in a while I find myself craving one.  This is a very simple and inexpensive recipe.
Ingredients:
  • 3-4 pork chops
  • 1 package pork stuffing mix
  • 2 cups applesauce
  • 1 tablespoon  Worcestershire
  • 2 tablespoons olive oil
Directions: Preheat oven to 350 degrees.  In medium bowl mix stuffing and 1 1/2 cups of applesauce together.  Heat olive oil in medium skillet over medium heat and add pork chops with worcestershire sauce and brown on each side for 5 minutes.  Place stuffing into greased 9 by 9 baking dish and place pork chops on top.  Add remaining applesauce to the top of each pork chop.  Bake covered for 45 minutes to 1 hour.  Serve with some kind of vegetables.  I made a nice green salad.

BBQ Ribs


This was my first attempt at BBQ ribs.  I have always been to scared to make them because I thought I would ruin them.  This recipe is so easy and they were amazing.  I will be making these a lot throughout the summer!



Ingredients:
  • 1 package pork baby back ribs
  • 1-2 cups BBQ sauce of your choice
Directions:  Boil a pot of water.  Peel membrane from the back of ribs and discard.  Cut ribs into section sizes of your choice.  Add to boiled water and boil on medium for 40 minutes.  Place boiled ribs on plate and slather as much BBQ sause as  you like to both sides of ribs.  Place on grill for 10-15 minutes until you have a nice glaze and crisp to them.  Serve with you favorite side dish!

Mini Pizzas


My husband loved these and now they are added to the list of regular dinners.  Such a plus for me because they are so easy and cheap!!! The possible combinations are endless and you can always use whole wheat bagels.  WIN WIN
Ingredients:
  • Bagel thins 6 halves
  • 1 can or bottle of favorite pizza sauce
  • 1 can pineapple chunks or circles
  • 1-2 cups Italian blend cheese
  • 1 package Canadian bacon
Directions:  Preheat oven to 425 degrees.  Toast each bagel slice in oven until slightly crisp.  (I used level five on my toaster)  Place each toasted half on baking sheet with foil.  Spread pizza sauce on each bagel then add a layer of cheese.  Top with Canadian bacon and add another layer of cheese then add pineapple to the top.  Bake for about 5 minutes or until cheese is melted.  Serve with Caesar salad.

Crockpot French Dip


Ingredients:
  • 1 beef chuck roast
  • 1 package Au Jus Mix
  • 1 package onion soup mix
  • provolone cheese
  • hoagie rolls
  • 1 cup water
Directions: Add roast to crock pot and top with Au Jus mix and onion soup mix.  Add 1 cup water and cook on low for 6-8 hours.  When finished shred meat and add to hoagie roll.  Place two pieces of cheese on top of meat and serve Au Jus sauce on the side.
Cookers Note:  I actually sliced my meat however it would have been a lot easier to eat if I had shredded it.

BBQ Chicken Salad Wraps


After ordering this a couple times at Red Robin I decided to attempt it at home.  It was a hit and Husband approved.  Another fast and simple meal.
Ingredients:
  • 1 package Tyson Grilled&Ready precooked chicken
  • 2 tablespoons BBQ sauce
  • Spinach Tortillas
  • 1 medium diced tomato
  • 1 package coleslaw with dressing
  • 1 large avocado sliced or chopped
  • 1/2 cup shredded cheese
  • Jalapeno Ranch dressing
  • Romaine lettuce
Directions:  In a small bowl mix chicken with BBQ sauce.  Microwave tortilla for 15 seconds to warm.  Spread Jalapeno ranch over tortilla.  Layer chicken, tomato, avocado, lettuce, coleslaw, and cheese.  Fold up both sides of tortilla and roll up as a burrito.
Cookers Note:  Next time I think I will add in some corn salsa or just corn and black beans.

Easy Apple Cinnamon French Toast


I fell in love with Apple Cinnamon French Toast in Florida.  We went out for breakfast one day and I ordered this and it was fantastic.  This was my attempt  and it was really good and easy.
Ingredients:
  • 1 package Hormel Country Crock Cinnamon Apples (at Safeway they are located by the roasted chickens)
  • 2 eggs
  • 1/2 cup milk
  • 6 pieces bread
  • 1/2 teaspoon vanilla
  • maple syrup

Directions:  Break eggs into medium bowl beat with fork.  Stir in milk and vanilla.  Over medium-low heat, heat griddle or skillet coated with a thin layer of butter or margarine.  Dip one piece of bread into bowl and coat each side evenly.  Transfer to griddle or skillet and cook until golden brown.
